Zucchini Pancakes
Ingredients
- 2-3 eggs
- ½ tsp salt
- 1 large clove garlic
- 3-4 cups shredded unpeeled zucchini
- ¼ cup grated cheese
- ½-1 cup Alison Holst's Baking Mix
Instructions
- Beat eggs, add garlic, salt zucchini, cheese and enough baking mix to make mixture of a "dropping" consistency. Deep fry until golden. Serve with Red Pepper Puree.
