Fruit mince ingredients
  1. 1 lemon, juice and skin cut into small pieces
  2. about 1 cup mixed dried fruit - raisins, sultanas, figs
  3. 1 apple chopped into small pieces
  4. about 100ml fruit juice
  5. allspice
  6. cinnamon
  7. ginger
  8. 1 T brown sugar
  9. 1 T white sugar
Pastry ingredients
  1. 2.5 cup flour
  2. 2.5 T sugar
  3. 1 T vanilla essence
  4. pinch salt
  5. 1 egg
  6. 2 T vegetable oil
  7. 1 T baking powder
  8. Milk
Fruit Mince
  1. Stir while bringing to boil and then cook on low heat for about 20 minutes.
  2. Refrigerate for 24 hours or more if possible.
Pastry
  1. Sift flour and baking powder, add sugar, vanilla, salt, egg, and oil. Mix and form a dough slowly adding milk while the dough has a firm consistency.
  2. Chill the pastry dough in the refrigerator if possible.
Pies
  1. Roll pastry into a thin sheet. Cut our circles large enough to fit the muffin pan. Fill with fruit mince (about 1 dessert spoon). Cut out star shapes from the pastry for tops.
  2. Bake at 180ºC for 15 minutes.
  3. Dust tops with icing sugar.

  1. 1/2 onion
  2. 250g mince
  3. 250g mixed vegetables
  4. 5 mushrooms
  5. puff pastry
  6. 200g grated cheese
  7. 1 cube beef stock
  8. 1 Tbsp flour
  9. 1 cup water
  10. Ketchup
Instructions
  1. Fry onion, mince, mushrooms and mixed vegetables. Add flour, stock and water to make a gravy. Line pie dish with pastry. Fill with cooked meat and vegetables. Cover with grated cheese and top with pastry. Cook at 180º C until pastry is golden brown.

Ingredients
  1. 12 puff pastry squares
  2. Almost 5 pears
  3. 3 Tbsp Brown Sugar
  4. 1 Lemon
  5. 1/4 cup Sultanas
  6. Cinnamon
  7. 3 Tbsp Water
  8. 1 Tbsp Corn flour
Filling
  1. Cut pears into pieces. Add brown sugar, sultanas, cinnamon, lemon zest and juice and 2 Tbsp water. Microwave on high for 3 minutes. Mix cornflour with 1 Tbsp water.
  2. Grease and line a muffin tray with sheets of pastry. Fill with pear and cinnamon filling. Bake at 200 ºC until pastry is golden brown.
Notes
  1. Serving suggestion: Top with vanilla ice cream or whipped cream.

Ingredients
  1. 185 grams butter
  2. 185 grams sugar
  3. 1 or 2 egg yolks
  4. 500 grams flour
  5. 2 tsp baking powder
  6. ½-¾ cup milk
Instructions
  1. Cream together butter and sugar. Add eggs. Add flour and baking powder. Mix together and add milk or milk & water. Add more flour if dough becomes sticky when rolling.

  1. Any cooked pasta
  2. 1-2 onions diced
  3. 2 tsp olive oil
  4. julienned courgettes
  5. Diced bacon or ham or cold meat as available
  6. Herbs (eg chopped parsley, thyme, chives)
  7. 4 or more eggs
  8. ½ cup milk
Instructions
  1. Sauté onions in olive oil with courgettes. Cook on a low heat until set then place under the grill until golden. Potato can replace the pasta.

Pastry
  1. 250 grams (½ lb) flour
  2. 1 tsp baking powder
  3. ½tsp salt
  4. 60 grams (2oz) dripping
  5. 60 grams (2oz) butter
Filling
  1. 6-8 eggs
  2. chopped bacon
  3. grated cheese
  4. chopped chives
  5. onion
  6. tomatoes
  7. any left-over cooked potato
  8. peas
  9. meat
  10. sausage
  11. Seasonings as desired
Pastry
  1. Grate dripping & butter into sifted dry ingredients. Use wire pastry blender to rub in the fat. Add a little milk to mix. Roll pastry and line pie dish.
Filling
  1. Add filling into pie crust and bake 190ºC (375ºF) for 35-45 minutes.

Lemon Meringue Pie

Ingredients
  1. 1 1/4 cup sugar
  2. 6 Tablespoons Cornflour
  3. Pinch salt
  4. 2 cups boiling water
  5. Grated rind of a lemon
  6. Pie shell - can use 200g crushed biscuits mixed with 100g butter
  7. 2/3 cup lemon juice
  8. 4-6 teaspoons sugar
  9. 2 large or 3 medium eggs
Instructions
  1. Make the pie shell using another pie shell recipe or crush 200g of plain biscuits with 100g butter. Chill.
  2. In a saucepan, mix sugar, cornflour and salt. Add boiling water and lemon rind and cook until very thick.
  3. Separate the egg yolks/whites.
  4. Remove from the heat and add two large egg yolks and 2/3 cup of lemon juice.
  5. Return to the heat and mix until steaming hot.
  6. Pour the mixture into the pie shell and cook for 5 minutes at 200 C.
  7. Beat 4 teaspoons of sugar with egg whites until stiff. Spread on top of the pie and cook for a further 12 minutes at 180 C.
  8. Can be eaten hot or chilled.
