Cheater’s Hot Cross Buns

You cannot buy hot cross buns from our local bakery in Turkey (even in the Easter season), but you can buy the dough that they use for baking normal bread. You can also buy amazing dried fruit here. Mixed together with a little sugar and spice, these ingredients make very tasty hot cross buns.

Ingredients
  1. 600g dough
  2. 300g fruit mix (currants, orange peel, dried apricot, dried fig, raisins)
  3. 50g sugar
  4. 1 teaspoon cinnamon
  5. 1/2 teaspoon allspice
Instructions
  1. Get fresh dough from the bakery. Knead in the mixed fruit, sugar and spices. Form into balls. Cut crosses into the buns. Bake for 20 minutes at 180 C. Glaze with melted butter.

Ingredients
  1. 600mls milk
  2. 185 grams sugar
  3. 2 Tbs dried yeast
  4. 1 egg
  5. ¾ tsp salt
  6. 2tsp cardamon
  7. 1 kg (2½lb) flour
  8. 185 grams butter
Instructions
  1. Dissolve sugar in the luke warm milk. cream the yeast & the salt & add to the milk. Beat the egg & ad to the mixture; also the cardomon seeds. Add enough flour to make “a thick porridge”. Beat with a wooden spoon to make smooth. Gradually add the rest of the flour, kneading until it leaves your hands. Knead in the butter till well mixed in. Leave to rise until double in size. Plait or make loaves. Leave to rise ½ hour. Brush with egg. Bake moderate oven 25-30 minutes. Makes 3 small loaves.

  1. 125 grams butter
  2. 600 mLs milk
  3. 2 rounded Tbs. dried yeast
  4. 5 breakfast cups flour
  5. 2 tsp salt
  6. 4 tsp sugar
Instructions
  1. Melt 125 grams butter and add
  2. 600mls. milk - warm to blood heat.
  3. Add 2 rounded Tbs. dried yeast and mix in.
  4. Sift 5 breakfast cups flour & 2 tsp salt. Add 4 tsp sugar.
  5. Add yeast mixture & mix to a stiff batter. Put aside to rise until it is double in size. Tip onto a floured board & divide into 48 portions. Put these in buttered muffin pans and leave to rise again. Bake 15 minutes at 200ºC (400ºF). Freeze well. Warm gently to thaw.
