Ingredients
  1. 3 cups flour
  2. 1 tsp baking soda
  3. ¼ tsp salt
  4. 1½ Tbs mixed spice
  5. ¾ cup sugar
  6. 1 cup warmed stewed fruit (apple, rhubarb, peaches, feijoas etc)
  7. 100 grams butter
  8. 2 beaten eggs
Instructions
  1. Add sugar to sifted dry ingredients. Melt butter in warm fruit, add eggs and combine with dry ingredients. Bake 20 minutes 180ºC (350ºF).

Ingredients
  1. 2 cups flour
  2. 2 tsp baking powder
  3. ½tsp salt
  4. ½ cup sugar
  5. 3 cups bran
  6. 2 tsp baking soda
  7. 1½ cups milk
  8. 4 Tbs melted butter
  9. 4 Tbs golden syrup
  10. 2 eggs
  11. 1 cup (2 large) mashed bananas
Instructions
  1. Preheat oven to 200ºC (400ºF). Grease or spray muffin pans. Sift flour, baking powder& salt into bowl. Add sugar & bran. Dissolve soda in warm milk, blend in melted butter, golden syrup. Beat eggs & combine liquid ingredients - mix thoroughly. Add mashed bananas. Mix with wooden spoon. Fill 18 muffin pans. Bake 15-20 minutes.

  1. 50 g butter
  2. 3 Tbs sugar
  3. 2 Tbs golden syrup
  4. 1 egg
  5. 1 carton yoghurt
  6. 1 cup flour
  7. 1 tsp baking soda
  8. ½ cup bran
  9. ½ cup dried fruit
Instructions
  1. Cream butter, sugar & syrup. Mix in egg & yoghurt. Sift in flour & soda. Add bran & fruit. Mix quickly. Bake 190ºC (375ºF) 15 minutes.

  1. 2 medium oranges - finely grate rind
  2. 125 grams butter
  3. 1 cup sugar
  4. 2 eggs
  5. ½ cup natural (unsweetened) yoghurt
  6. ½ cup orange juice
  7. 1 tsp baking powder
  8. ½ tsp baking soda
  9. 2 cups flour
  10. 90 grams (½ cup) chocolate chips
Instructions
  1. Cream butter & sugar, beat in eggs & rind. Add yoghurt, juice, baking powder and soda. Fold in flour & chocolate chips. 15-20 minutes at 190ºC (375ºF).

  4. 1 cup wholemeal flour
  5. 50 grams butter
  6. ½ cup castor sugar
  7. ½ cup chocolate chips
  8. 2 mashed bananas or 2 Tbs cocoa
  9. ½ cup milk
  10. 2 eggs
Instructions
  1. Sift dry ingredients. Rub in butter. Add choc chips and bananas (or cocoa) and mix with beaten eggs and milk. Bake 20 minutes at 180ºC (350ºF).

  1. 2 cups self raising flour
  2. ¾ cup sugar
  3. ¼ tsp salt
  4. ½ cup cream cheese
  5. 1 cup milk 1 egg
  6. 1 tsp finely grated orange rind
  7. 1 cup (125 grams) frozen or fresh strawberries
Instructions
  1. Mix dry ingredients. Beat cream cheese until smooth; add milk, egg, orange rind and whisk together. Chop strawberries and combine all gently. Cook in sprayed muffin pans 200ºC (400ºF) about 15 minutes.

  4. ½ cup (75 grams) chopped macadamia nuts
  5. ¾ cup (100 grams) chopped white chocolate
  6. 100 grams butter
  7. 1 cup milk
  8. 1 large egg
  9. 2 tsp vanilla
Instructions
  1. Mix dry ingredients well. Melt butter, add milk, egg & vanilla and beat well. Gently combine with dry ingredients and spoon into sprayed muffin pans. Bake 180ºC (350ºF) for about 12 minutes.

Ingredients
  1. 2 cups self raising flour
  2. 1 cup sugar
  3. ½ cup poppyseeds
  4. finely grated rind of 2 lemons
  5. 100 grams butter, melted
  6. 2 large eggs
  7. 1 cup milk
  8. juice of 2 lemons
  9. ¼ cup sugar
Instructions
  1. Measure out first set of ingredients into bowl. Beat eggs into melted butter, add milk. Mix liquids into dry ingredients lightly and put in sprayed muffin pans. Bake at 200ºC (400ºF) for 10-12 minutes until cooked. Brush lemon juice & sugar mixture over muffins while hot. Remove & cool on a rack.
