Ingredients
  1. Potatoes

Instructions
  1. Clean potatoes. Slice potatoes in half lengthwise. Cut slits about two-thirds deep across the width of the potato. Baste with garlic salt and butter. Bake in the oven at 200ºC for 20 minutes

  3. 1 tin of sweetcorn
  4. flour
  5. 2 eggs

Instructions
  1. Chop onion. Add tuna and corn in a bowl. Cover with flour and mix. Add eggs and milk to make a batter. Fry in oil.

Ingredients
  1. 1/2 onion
  2. 250g mince
  3. 250g mixed vegetables
  4. 5 mushrooms
  5. puff pastry
  6. 200g grated cheese
  7. 1 cube beef stock
  8. 1 Tbsp flour
  9. 1 cup water
  10. Ketchup
Instructions
  1. Fry onion, mince, mushrooms and mixed vegetables. Add flour, stock and water to make a gravy. Line pie dish with pastry. Fill with cooked meat and vegetables. Cover with grated cheese and top with pastry. Cook at 180º C until pastry is golden brown.

  1. 1 Onion
  2. 2 mushrooms
  3. 1 leek
  4. 1 capsicum
  5. 1 cup cooked firm chickpeas
  6. 1 tsp ground coriander
  7. Parsley
  8. Thyme
  9. 1/2 cup tomato puree
  10. 1 cup water
Instructions
  1. Finely chop onion. Stir fry with chickpeas and chopped mushroom. Add leek, cut into long strips. Add capsicum, also cut in long strips. Add herbs and spice. Add tomato puree and water. Cook 2-3 minutes.
Notes
  1. Serving suggestion: on pasta with meatballs.

Chickpea and chicken salad

I had some cooked chickpeas left after making falafels earlier in the week so I created this recipe to use some of them.

Ingredients
  1. 1 onion
  2. 1 chicken breast
  3. cumin
  4. 2 mushrooms
  5. 50ml water
  6. 1 eggplant
  7. fresh parsley
  8. 3 cups of firm cooked chickpeas
Instructions
  1. FInely chop and stir fry onion in a small amount of vegetable oil. Cut the chicken into small cubes and stir fry. Sprinkle with about 1 tsp of cumin. Finely chop the mushrooms and add to the chicken. Add 50ml hot water. Add the eggplant cut into cubes. When the water has evapourated add chickpeas and continue stir frying for 5 minutes. Top with the coarsely chopped parsley.

  1. 1 clove garlic (1 tsp)
  2. 1 chopped onion
  3. 2 tsp grated root ginger
  4. 1 tsp minced chilli
  5. 1 tsp coriander
  6. ½ tsp cumin
  7. ½ tsp turmeric
  8. 1½ tsp satay sauce/ peanut butter
  9. 2 tsp oil
  10. thinly peeled strips of a lemon
  11. 1 tsp salt
  12. 1 cup coconut cream
  13. 1 tsp sugar
  14. 500 grams fresh fish cut in cubes
Instructions
  1. Process in food processor 1st 8 ingreds. & cook paste for 2 minutes in oil. Add lemon strips and coconut cream slowly while stirring. Add salt, sugar and fish pieces. Simmer 10 minutes

Ingredients
  1. 6 chicken pieces - skinned
  2. 2 sliced onions
  3. 2 stalks celery
  4. 3 carrots cut diagonally
  5. 1 tsp fresh basil
  6. 1 tsp ginger
  7. ½ cup chicken stock
  8. ¼ cup tomato puree
  9. 1 tsp chopped parsley or basil
Instructions
  1. Brown chicken. In microwave dish mix together the rest of the ingredients, then cook on High for 5 minutes. Add chicken. Cook on high 5 minutes. Add chopped parsley or basil. Serve with rice & cauliflower.

  3. 450 grams mincen
  4. 1 packet tomato soup
  5. 4 ½ cups water
  6. 1 Tbs instant beef stock
  7. 1 cup frozen mixed vegies
  8. 1 packet Lasagne
Instructions
  1. Sauté onion in butter. Add and brown mince. Then add rest of ingredients. Simmer 20-25 minutes, stirring occasionally. Serve with grated cheese, fresh herbs etc.

  1. 1 Tbs oil
  2. 1 tsp chilli or 1 chopped chilli
  3. 2 grated carrots
  4. 4-5 cloves sliced garlic
  5. 1 medium onion, chopped
  6. 1 green capsicum, chopped
  7. 6-8 mutton chops, trimmed
  8. 2 Tbs tomato puree
  9. ½ cup beef stock
Instructions
  1. Pre-heat crock pot on high while preparing veges. Gently fry chilli, carrots, onion, garlic & capsicum about 2 minutes. Sprinkle chops with salt and half vegie mix, then another layer of chops and rest of vegie mix. Pour over tomato puree & beef stock. Cover & cook 4-5 hours.

  1. Vegemite
  2. Blade steak
  3. Cornflour
Instructions
  1. (Quick to prepare, tender & tasty) Spread vegemite over half the pieces of cut-cross blade steak. Sandwich these together with the other pieces. No need to grease the casserole or add any liquid or other seasonings. Cover the casserole and cook in a slow oven for 2-3 hours. Thicken the juices with cornflour for gravy.
