Mexican Chops (Crock Pot)

Ingredients
  

  • 1 Tbs oil
  • 1 tsp chilli or 1 chopped chilli
  • 2 grated carrots
  • 4-5 cloves sliced garlic
  • 1 medium onion chopped
  • 1 green capsicum chopped
  • 6-8 mutton chops trimmed
  • 2 Tbs tomato puree
  • ½ cup beef stock

Instructions
 

  • Pre-heat crock pot on high while preparing veges. Gently fry chilli, carrots, onion, garlic & capsicum about 2 minutes. Sprinkle chops with salt and half vegie mix, then another layer of chops and rest of vegie mix. Pour over tomato puree & beef stock. Cover & cook 4-5 hours.
