Strawberry Cream Cheese Muffins

  • 2 cups self raising flour
  • ¾ cup sugar
  • ¼ tsp salt
  • ½ cup cream cheese
  • 1 cup milk 1 egg
  • 1 tsp finely grated orange rind
  • 1 cup 125 grams frozen or fresh strawberries


  • Mix dry ingredients. Beat cream cheese until smooth; add milk, egg, orange rind and whisk together. Chop strawberries and combine all gently. Cook in sprayed muffin pans 200ºC (400ºF) about 15 minutes.
