Pulla Bread - a sweet bread from Finland

  • 600 mls milk
  • 185 grams sugar
  • 2 Tbs dried yeast
  • 1 egg
  • ¾ tsp salt
  • 2 tsp cardamon
  • 1 kg 2½lb flour
  • 185 grams butter


  • Dissolve sugar in the luke warm milk. cream the yeast & the salt & add to the milk. Beat the egg & ad to the mixture; also the cardomon seeds. Add enough flour to make “a thick porridge”. Beat with a wooden spoon to make smooth. Gradually add the rest of the flour, kneading until it leaves your hands. Knead in the butter till well mixed in. Leave to rise until double in size. Plait or make loaves. Leave to rise ½ hour. Brush with egg. Bake moderate oven 25-30 minutes. Makes 3 small loaves.
