Pink Lady Cake

Ingredients
  

  • 125 grams butter 4oz
  • 1 cup sugar
  • 3 eggs
  • ½ cup milk
  • ½ tsp cochineal red food colouring
  • 185 grams 6 oz flour
  • 1 tsp baking powder
  • pinch salt
  • 1 breakfast cup coconut

Instructions
 

  • Beat butter sugar & then eggs together. Add milk, cochineal, then flour, baking powder salt, coconut and mix well. Bake in medium tin 180ºC (350ºF) for about 40 minutes. Ice and sprinkle with extra coconut when cold.
