Mexican Chops (Crock Pot)
Ingredients
- 1 Tbs oil
- 1 tsp chilli or 1 chopped chilli
- 2 grated carrots
- 4-5 cloves sliced garlic
- 1 medium onion chopped
- 1 green capsicum chopped
- 6-8 mutton chops trimmed
- 2 Tbs tomato puree
- ½ cup beef stock
Instructions
- Pre-heat crock pot on high while preparing veges. Gently fry chilli, carrots, onion, garlic & capsicum about 2 minutes. Sprinkle chops with salt and half vegie mix, then another layer of chops and rest of vegie mix. Pour over tomato puree & beef stock. Cover & cook 4-5 hours.
