Ingredients
  1. 400-450 grams (1 lb) mixed fruit or sultanas
  2. 250 grams (½ lb) butter
  3. 1½ cups sugar
  4. 3 beaten eggs
  5. 2½ cups Hi-grade flour
  6. 1 tsp baking powder
  7. 1 tsp vanilla
  8. ½ tsp lemon
Instructions
  1. Put dried fruit into large pot, cover with water & simmer for 5 minutes. Strain & add butter. Stir until melted then add rest of ingredients. Mix well. Bake in lined round or square tin about 1 hour 180ºC (350ºF).
