Fruit Cake (Boiled)
Ingredients
- 400-450 grams 1 lb mixed fruit or sultanas
- 250 grams ½ lb butter
- 1½ cups sugar
- 3 beaten eggs
- 2½ cups Hi-grade flour
- 1 tsp baking powder
- 1 tsp vanilla
- ½ tsp lemon
Instructions
- Put dried fruit into large pot, cover with water & simmer for 5 minutes. Strain & add butter. Stir until melted then add rest of ingredients. Mix well. Bake in lined round or square tin about 1 hour 180ºC (350ºF).
