Fish: Coconut Curry Dish (Malaysia/Indonesian)
Ingredients
- 1 clove garlic 1 tsp
- 1 chopped onion
- 2 tsp grated root ginger
- 1 tsp minced chilli
- 1 tsp coriander
- ½ tsp cumin
- ½ tsp turmeric
- 1½ tsp satay sauce/ peanut butter
- 2 tsp oil
- thinly peeled strips of a lemon
- 1 tsp salt
- 1 cup coconut cream
- 1 tsp sugar
- 500 grams fresh fish cut in cubes
Instructions
- Process in food processor 1st 8 ingreds. & cook paste for 2 minutes in oil. Add lemon strips and coconut cream slowly while stirring. Add salt, sugar and fish pieces. Simmer 10 minutes
