“Encore” Steamed Pudding

Cook Time 5 minutes


  • 2 cups stale cake crumbs
  • ½ cup flour
  • ½ tsp baking soda
  • ¼ cup white or brown sugar
  • 50 g cold butter
  • ¼ - ½ cup sultanas / currants
  • ¾ - 1 cup milk / juice


  • In food processor make cake into crumbs. Add flour, soda, & sugar. Mix thoroughly. Cut in the butter, add the dried fruit if desired and stir in enough liquid to make a batter. Place in a greased ring mould, cover with film and place an inverted plate on top. Microwave on high for 5 minutes. Stand 2-3 minutes.
