“Encore” Steamed Pudding
Ingredients
- 2 cups stale cake crumbs
- ½ cup flour
- ½ tsp baking soda
- ¼ cup white or brown sugar
- 50 g cold butter
- ¼ - ½ cup sultanas / currants
- ¾ - 1 cup milk / juice
Instructions
- In food processor make cake into crumbs. Add flour, soda, & sugar. Mix thoroughly. Cut in the butter, add the dried fruit if desired and stir in enough liquid to make a batter. Place in a greased ring mould, cover with film and place an inverted plate on top. Microwave on high for 5 minutes. Stand 2-3 minutes.
