Cheddar Cheese Soup

Ingredients
- 40 grams (1½ oz) butter/margarine
- 1 large onion
- 2 sticks celery
- 25 grams (1 oz) flour
- ½ litre (1 pint) milk
- ¼ litre (½ pint) chicken stock
- pinch of nutmeg
- 125 grams (5 oz) grated cheese
- salt
- pepper
Instructions
- Gently sauté the onion and celery until softened. Add the flour, cook 2 minutes stirring all the time. Add the milk, stock and nutmeg and simmer gently for 5 minutes. Add cheese and serve hot.
