Ingredients
  1. 40 grams (1½ oz) butter/margarine
  2. 1 large onion
  3. 2 sticks celery
  4. 25 grams (1 oz) flour
  5. ½ litre (1 pint) milk
  6. ¼ litre (½ pint) chicken stock
  7. pinch of nutmeg
  8. 125 grams (5 oz) grated cheese
  9. salt
  10. pepper
Instructions
  1. Gently sauté the onion and celery until softened. Add the flour, cook 2 minutes stirring all the time. Add the milk, stock and nutmeg and simmer gently for 5 minutes. Add cheese and serve hot.
