Cheddar Cheese Soup

Ingredients
  

  • 40 grams 1½ oz butter/margarine
  • 1 large onion
  • 2 sticks celery
  • 25 grams 1 oz flour
  • ½ litre 1 pint milk
  • ¼ litre ½ pint chicken stock
  • pinch of nutmeg
  • 125 grams 5 oz grated cheese
  • salt
  • pepper

Instructions
 

  • Gently sauté the onion and celery until softened. Add the flour, cook 2 minutes stirring all the time. Add the milk, stock and nutmeg and simmer gently for 5 minutes. Add cheese and serve hot.
