Cheddar Cheese Soup
Ingredients
- 40 grams 1½ oz butter/margarine
- 1 large onion
- 2 sticks celery
- 25 grams 1 oz flour
- ½ litre 1 pint milk
- ¼ litre ½ pint chicken stock
- pinch of nutmeg
- 125 grams 5 oz grated cheese
- salt
- pepper
Instructions
- Gently sauté the onion and celery until softened. Add the flour, cook 2 minutes stirring all the time. Add the milk, stock and nutmeg and simmer gently for 5 minutes. Add cheese and serve hot.
