Bean Salad
Ingredients
- 1 cup kidney beans
- 1 cup green beans
- 1 cup butter beans
- 1 onion
- 1 red capsicum
- 1 green capsicum
Dressing
- ¼ cup malt vinegar
- ¼ cup liquid from beans
- ¼ cup oil
- 1½ t salt
- pepper
- ¼ cup sugar
Instructions
- Soak required amount of dried beans overnight in plenty of water. Simmer beans in fresh water until tender, taking care they don't break up. Combine with cooked green beans & cooked butter beans. Add onion cut in chunks, red & green capsicum (or tinned). While the beans are warm add dressing.
Dressing
- Mix ingredients & stir in sugar. Chill 24 hours.
