Bean Salad

Ingredients
  

  • 1 cup kidney beans
  • 1 cup green beans
  • 1 cup butter beans
  • 1 onion
  • 1 red capsicum
  • 1 green capsicum

Dressing

  • ¼ cup malt vinegar
  • ¼ cup liquid from beans
  • ¼ cup oil
  • t salt
  • pepper
  • ¼ cup sugar

Instructions
 

  • Soak required amount of dried beans overnight in plenty of water. Simmer beans in fresh water until tender, taking care they don't break up. Combine with cooked green beans & cooked butter beans. Add onion cut in chunks, red & green capsicum (or tinned). While the beans are warm add dressing.

Dressing

  • Mix ingredients & stir in sugar. Chill 24 hours.
