Ingredients
  1. 1 cup dried apricots cut small
  2. 1 cup boiling water
  3. 185 grams butter (6oz)
  4. 185 grams sugar (6oz)
  5. 250 grams flour (8 oz)
  6. 3 eggs
  7. ¾ tsp baking soda
Instructions
  1. Soak cut apricots in boiling water. Cream butter and sugar, add eggs one at a time, beating well. Drain apricots (save liquid), and add to creamed mixture. Add sifted flour. Add soda to ½ cup apricot liquid and stir into mixture. Pour into greased and lined 20cm (8”) tin. Bake in a moderate oven (180ºC/350ºF) for 45-50 minutes.

Ingredients
  1. 125 grams butter (4oz)
  2. 1 cup sugar
  3. 3 eggs
  4. ½ cup milk
  5. ½ tsp cochineal (red food colouring)
  6. 185 grams (6 oz) flour
  7. 1 tsp baking powder
  8. pinch salt
  9. 1 breakfast cup coconut
Instructions
  1. Beat butter sugar & then eggs together. Add milk, cochineal, then flour, baking powder salt, coconut and mix well. Bake in medium tin 180ºC (350ºF) for about 40 minutes. Ice and sprinkle with extra coconut when cold.

  1. 2 cups self raising flour
  2. 2 cups sugar
  3. 4 Tbs custard powder
  4. 1 cup milk
  5. 250 grams softened butter / margarine
  6. 1 tsp vanilla
  7. 4 eggs
Instructions
  1. Place all above in mixing bowl and beat with electric beaters, low -med. for 10minutes Bake in 2 tins (20cm) for 40-45 minutes. Variation - put sliced raw apple on top with cinnamon and sugar.

Ingredients
  1. 1½ cups flour
  2. 1 tsp baking powder
  3. ¼ tsp salt
  4. ¾ cup sugar
  5. 125 grams butter
  6. 2 eggs
  7. ½ cup milk
  8. grated rind of lemon
Topping
  1. lemon
  2. ¼ cup
Instructions
  1. Sift flour, baking powder salt and add sugar. Rub in butter and mix in eggs with milk. Add rind. Bake in loaf tin for 1 hour or ring tin for 50 minutes. Remove from oven and pour over topping. Remove from tin when cool.
Topping
  1. Mix juice of lemon with sugar.

Ingredients
  1. 4 eggs (3 duck)
  2. 170 grams (6 oz) sugar
  3. 2 Tbs water
  4. 170 grams (6 oz) corn flour
  5. 1 dessert spoon flour
  6. 1 heaped tsp baking powder
  7. Vanilla essence
Instructions
  1. Separate eggs. Beat whites until peaks form. Boil sugar and water and add to egg whites gradually while beating Add egg yolks & essence, then fold in sifted dry ingredients. Bake 190ªC (375ºF) 15 - 20 minutes.

  7. 4 Tbs cocoa
  8. 2 cups warm milk
  9. 2 tsp baking soda
  10. 1 tsp vanilla
Instructions
  1. Cream butter & sugar. Beat in eggs & golden syrup. Sift dry ingredients & add alternately with soda which has been dissolved in milk. Lastly add the baking powder & vanilla. Bake in 1 large or 2 medium lined tins, 180ºC (350ºF) for 45 minutes.

Ingredients
  1. 1-2 oranges
  2. 1 cup sugar
  3. 125 grams butter
  4. 3 eggs
  5. 1 cup Self Raising flour
  6. ¾ cup Plain flour
  7. water
  8. 1 Tbs lemon juice
  9. Juice of oranges
Instructions
  1. Put thinly peeled orange peel with the sugar in food processor. Add softened butter and process, adding the eggs. Measure the flours and put juices in ½ cup measure, making up the amount with water. Mix and put in ring tin. Bake 180ºC (350ºF) for 40 minutes. Leave stand 5-10 minutes. Dust with icing sugar. Serve warm with strawberries and cream or cold and iced as a cake.

  1. 250 grams (½ lb) butter
  2. 450 grams (1 lb) flour
  3. 250 grams (½ lb) sugar
  4. 750 grams (1½ lb) mixed fruit
  5. 2 tsps mixed spice
  6. ½ tsp salt
  7. 2 tsps baking soda
  8. 2 large cups of very hot milk
Instructions
  1. Rub butter into flour. Mix in sugar, spice and salt. Add fruit & mix well. Dissolve soda in milk. Add milk & soda and blend. Bake in old square cake tin 1½ - 2 hours in moderate oven. Keep 3 days before cutting.
