Lemon Cake
Ingredients
- 1½ cups flour
- 1 tsp baking powder
- ¼ tsp salt
- ¾ cup sugar
- 125 grams butter
- 2 eggs
- ½ cup milk
- grated rind of lemon
Topping
- lemon
- ¼ cup
Instructions
- Sift flour, baking powder salt and add sugar. Rub in butter and mix in eggs with milk. Add rind. Bake in loaf tin for 1 hour or ring tin for 50 minutes. Remove from oven and pour over topping. Remove from tin when cool.
Topping
- Mix juice of lemon with sugar.
