Baked Potatoes
Ingredients
- 4 medium potatoes
Avocado & Bacon
- Sour cream
- Avocado
- Lemon juice
- Pepper
- Bacon bits
Cheese & Chives
- 2 Tbs Parmesan cheese
- ½ tsp cumin
- Salt
- Pepper
- 1 Tbs chopped chives
Tuna & Sour Cream
- 185 grams tin tuna in brine
- Pepper
- 2 Tbs parsley
- Sour cream
Instructions
- Bake potatoes in microwave for 12-14 minutes. Cover & refrigerate several hours. Cut slice off the top & scoop out all but ½ cm around the edge. Fill with desired filling and reheat.
Avocado & Bacon Filling
- Mash potato with sour cream. Dice avocado with lemon juice & pepper. Add cooked bacon bits.
Cheese & Chives Filling
- Mash potato and mix with ingredients.
Tuna & Sour Cream Filling
- Mash potato and mix with ingredients.
Notes
Suggestion: Reheat in standard oven for crispier skin.
