Bake potatoes in microwave for 12-14 minutes. Cover & refrigerate several hours. Cut slice off the top & scoop out all but ½ cm around the edge. Fill with desired filling and reheat.

Mash potato with sour cream. Dice avocado with lemon juice & pepper. Add cooked bacon bits.
