Fruit Cake (Boiled)

Ingredients
  

  • 400-450 grams 1 lb mixed fruit or sultanas
  • 250 grams ½ lb butter
  • cups sugar
  • 3 beaten eggs
  • cups Hi-grade flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • ½ tsp lemon

Instructions
 

  • Put dried fruit into large pot, cover with water & simmer for 5 minutes. Strain & add butter. Stir until melted then add rest of ingredients. Mix well. Bake in lined round or square tin about 1 hour 180ºC (350ºF).
